CJ’s Canadian Bacon & Egg cups
Serves: 4 Prep Time: 10 min Cook Time: 20 min
THE PARTS:
8 large eggs
16 slices Canadian bacon
Pinch of salt
Pinch of black pepper
Dash of favorite hot sauce (optional)
THE STEPS:
Preheat the oven to 350°F (180°C). Spritz a large muffin tin with non-stick cooking spray. (8 count)
Place 2 slices of Canadian bacon into each tin and shape them into cups.
Crack one egg into each cup, and season with salt and pepper to taste. .
Bake for 18-20 minutes, or until the centers of the eggs are set and firm. (For creamier yolks, bake until the centers are set but not firm.
Top with a dash of hot sauce (optional)
MEAL PREP TIPS:
Double the recipe! Store in an air-tight container for up to 6 days. Enjoy them cold, or reheat in the microwave for 10-15 seconds, add 10 seconds until warm to your liking.
